NOW Foods' Wheat Gluten Flour (also known as Vital Wheat Gluten) is derived from durum wheat. It is considerably higher
in protein (70% protein) than most other gluten flours - and is quite low in
carbohydrates. Gluten is the primary protein component in wheat. It is isolated
to provide a very high protein, low carb alternative to whole wheat.
Wheat gluten is prepared by removing starch from wheat flour and carefully
drying the remaining high protein gluten in such a manner as to retain
the native properties of the wheat gluten. It can be used in a wide
variety of baking applications, including breads, rolls, bakery mixes,
and pastries.
Do not be confused by other products labeled "High Gluten Flour". That is just
regular (high carb!) white wheat flour with a small amount of extra gluten added.
Generally it is only about 10% to 15% protein.
NOW Foods' Wheat Gluten Flour is 70% protein - providing 23 grams
of protein and only 5 grams of carbs per 1/4 cup.
Also try Wheat Protein Isolate which is even lower in carbs and
higher in protein than Wheat Gluten Flour.
